		<description>I&#039;d be interested in seeing a true vegetarian diet as well, not having to modify an existing one, especially since a properly balanced diet would require considerably more than just replacing the meat products with tofu, and seafood isn&#039;t an option for a true vegetarian. 

Also, I couldn&#039;t help but notice that several of the recipes require pouring olive oil over foods. Wouldn&#039;t it be healthier to eliminate that step entirely?</description>

		<description>For the vegetarians...just remove the protein and add many of the lovely tofu products that are offered.  Tempeh is a marvelous meat substitute as it has a meat texture but is totally vegan.  There are many Morningstar products on the shelf that are tasty and fulfilling as well.</description>
