Chef Ladidi, typically Caesar is made with olive oil and egg. The tofu was incorporated into the dressing to lighten it. One ounce of tofu is only 15 calories compared to one ounce of olive oil which is 248. And the acids are both added to add flavor. They are both necessary to make a traditional Caesar salad. The only thing that's different compared to other Caesar dressings are the fat substitutions everything else is your basic Caesar.

question? what purpose does the tofu serve? As a chef I never needed to add tofu to anything, it has no flavor. Also you don't need two acids, just fresh lemon juice is fine

Ma,

If it weren't a recipe for Caesar salad then omitting those things would be fine. This isn't a recipe for rosemary-lemon chicken salad, though. I don't think anyone would fault you for omitting those items that you don't want due to their sodium content, but it would no longer be a Caesar-flavored dish.

this would be so much better without the soy, mustard, anchovies, worcestershire sauce and wine vinegar. Think how much sodium would be eliminated. Just cook the chicken with rosemary and lemon juice and the other things aren't needed.
