Stars love baked treats, too. Here’s a recipe that celebrity chef Bethenny Frankel (pictured at left, with Mariska Hargitay) whipped up for the “Law and Order: SVU” star: Joyful Heart Fudge Chip Muffins—named for Hargitay’s Joyful Heart Foundation, which helps sexual assault survivors heal mind, body, and spirit.

Cook: 20 minutes
Makes 8 muffins
Ingredients:
Cooking spray
1 cup applesauce
1 teaspoon canola oil
1/2 cup turbinado sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3/4 cup oat flour
1/3 cup unsweetened cocoa
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground cinnamon
1/2 cup semisweet dairy- and gluten-free chocolate chips (such as Sunspire)
Powdered sugar (optional)
Instructions:
1. Preheat oven to 350°. Place 8 paper liners in muffin tin; coat with cooking spray.
2. Combine applesauce and next 4 ingredients. In a sepa-rate bowl, whisk together the next 6 ingredients. Add oat mixture to applesauce mixture; stir until blended. Stir in chocolate chips.
3. Spoon batter into muffin cups. Bake for 20–22 minutes, rotating the pan a half-turn after 10 minutes. Muffins are done when tops are firm to the touch.
4. Cool slightly. Top with powdered sugar, if desired. (Serving size: 1 muffin)

I just made these; it was my first vegan baking experience and I was skeptical. They turned out a bit flat, but taste-wise? Very fudgy! Though I’m wondering if this recipe has the muffins in the oven long enough. The same recipe on Bethenny’s website has them baking for 50 minutes. Which one’s right?
Being a celiac, I can’t wait to try this recipe since it’s also gluten-free! Thank you because it’s difficult to find good, healthy alternatives that are gluten-free along with guilt-free.
My family loved these muffins! My dad is on a gluten-free diet so this was a really treat for him. My mom on the other hand, turns her nose up at “health food” and she loved them so much she asked for the recipe!
These muffins are delicious. My youngest in which is 8 came back wanting more. Im on weight watchers so this chocolate treat is just that a treat..!!

If you are gluten intolerant/celiac beware that the oat flour can still contain gluten if it is milled around other flours by cross contamination. You can obtain oat flour that is actually gluten free because it is milled and certified gluten free by testing (away from other flours). That is why some GT folks can’t tolerate oat flour. I made these with rice flour and the texture wasn’t right but they were alright. I think I ate one and tossed the rest.
what is “turbinado sugar” and why is it better than
white or brown sugar?
Yes, where can you purchase turbinado sugar? Hope it’s available in the grocery stores.
